Becoming a Green Goddess
Unless you’ve been living under a rock the last few months, you will have heard of the Green Goddess salad dressing. Created by Pastry Chef Melissa, of Baked by Melissa, this vegan pesto dressing is loaded with veggies, herbs, and other plant-based friendly ingredients. Since the emergence of the Green Goddess Salad, others are jumping on the bandwagon to create their own take on becoming a ‘Green Goddess’.
I have recently discovered another take, by making a ‘Green Goddess Soup’. Packed full of fibre enriched green vegetables such as broccoli, spinach and celery, all also full of antioxidants which are especially important this time of year!!
Just chop one onion and three celery sticks in a large saucepan with your choice of oil for 10 minutes or until softened. Then add 2 cloves of crushed garlic and mix in and cook for another 2 minutes. Then add a whole head of broccoli chopped in to roughly 2cm chunks with 1litre of vegetable stock. Reduce the heat and simmer until the broccoli is softened and add approximately 2 cups of frozen peas and 180g of spinach and cook for 1 minute. Season to your liking and then either blitz with a stick blender or a high-speed food processor. Enjoy!
